Beef Shares:

Any time you are buying a beef share, you are buying into cuts from the whole animal. You can expect 15% premium cuts, 35% secondary muscle roasts and steaks, and 50% ground and/or patties. for  example, a 1/4 share typically is composed of about:

15 pounds of primary cuts such as: ribeye, t-bones, porterhouse, ny strip, filet mignon, top sirloin, flat irons, etc 

35 pounds of secondary muscle roasts and steaks such as: chuck roasts, round roasts, fajita strips, osso bucco, short ribs, stew meat, etc

50 pounds ground: ground beef, chorizo, breakfast sausage, burger patties

Add ons by request - bones, beef fat, organ meats.

Our share pricing passes on a significant savings per pound by comparison to our by the cut pricing as our way of saying thank you for choosing our local grass fed and grain finished dry aged Wagyu beef to feed you and your loved ones.

All of our fullblood wagyu, have certification paperwork describing lineage, and genetic make up of the animal, certified by the American Wagyu Association. With any Wagyu Crosses or breeding projects , we are happy to provide the lineage of the animal as well.

1/4 share | 100 pounds | $2400- $4800 

1/2 share | 200 pounds | $ 4800 -$9600

Whole share | 400 pounds |  $9,600 - $19,200

Butcher costs avg  is 129$+ 1.09/lb (if buying quarters) for hanging weight (avg hanging weight is about 600 lb) 

or 

129$+ .99/lb (if buying half or full) 

 

you will pay butcher cost in proportion to the amount of beef share ordered. 

 

if its 129+654 = 783 butcher cost and you buy a quarter cow, you would pay 2400+195.75 for your beef share. say you paid 2400$ for the ownership of the quarter cow, and 195.75 to airlie meats upon pick up.

you will pay butchering costs directly to airlie meats, as thats who we typically work with, unless you have a butcher of your own and are buying a whole cow, In which case we can deliver for free within 60 miles of Dallas Oregon to a butcher of your choice.
